Vinification: Low pressure press to extract free run & chilled to allow solids to settle. Clears racked off & inoculated for primary ferment. Secondary tank ferment prior to bottling. Vintage Conditions: A Goldilocks Vintage - not too wet or not too dry, with very even growing conditions. Minimal manipulation required with a long even ripening period. Favourable and dry conditions from January to late April, encouraged elegant fruit flavours to develop.

Blanc de Blancs typically express elegance and this wine is no exception. The palate is brisk and fresh, light brioche notes supporting an austere chalk driven mineral structure with a lively citrus texture. Truly a wine for celebration, oysters, seafood platters and plenty of laughter. Alcohol 12.5%

The good thing here is that you get flavour, and a good deal of it, but you also get a dry finish, which both keeps you coming back and makes it a good match with food. Stonefruit and pear flavours are the motor for this wine, though they are tempered by citrus and gently complexed by pastry-like notes. It works well.
Blanc de Blancs
French for “white of whites”, Blanc de Blancs is a sparkling wine made entirely from Chardonnay grapes. Made famous in Champagne, these wines have an incredible purity and linearity about them and express with intense lemon and apple-like fruit flavours, usually with an underlying seam of minerality and precise acidity.
