The Shiraz and Viognier were handpicked from the Hobbs Estate vineyard at optimal sugar, tannin and acid ripeness. The grapes were co-fermented - natural/wild ferment, in small batches, hand plunged and monitored closely to ensure perfect balance and integration. Once fermentation was finished, approx. 10 days, the wine was pressed off the skins into 80% new French oak barrels for malolactic fermentation and maturation

Tasting notes
Full-bodied and ripe, with supple tannins, it’s almost creamy in texture lush and sumptuous, yet with a bright spark of acidity and the suggestion of both brighter, fresher fruit and roasted meat on the lingering finish.

This is stunningly beautiful and stylish with Black Doris plum, sweet cherry, vanilla and cedar characters with a lovely spicy overtone. The concentrated palate displays rich fruit intensity with refined texture and fine grainy tannins, offering both structure and opulence.
