Partial whole bunch & fermented in both small & medium sized open fermenters using wild yeast. A combination of hand plunging and pump overs allowed for gentle extraction of colour, flavour and tannins. After 10 days on skins the wine was pressed and put to old French oak Botti for 12 months. About the wine

Tasting notes

Vibrant purple colour, this wine has loads of blueberry and black olive character on the nose. The whole bunch component gives a dried herb character to the wine and adds freshness to the palate. It is particularly generous in red and dark fruit thanks to the the Indian summer in 2021, making it a great drink on its own, but can also pair well with red meat dishes.

The Grape

Shiraz or Syrah

Shiraz, or Syrah, is one of the most loved, rich and powerful red wine varieties made famous for its mineral and structured expressions from the Rhône in France and the rich and decadent fruity expressions from the Barossa Valley in Australia. Full bodied, rich in antioxidants and generously fruity, Shiraz sits proudly on the table for those that like their wine big and bold. Think violets, blackberries, plum, chocolate, pepper, black olive, liquorice, rosemary, tobacco and spice...i'm thirsty already!
