A truly wonderful white, made as a thankyou to my mum as she loves Chardonnay (and so do we!). Definitely one for the Chardonnay fans who love a crisp and refreshing drop with intense citrus and subtle complexing oak! This wine will age well but you better get in quick before mum and myself drink it all!Drink now to 8 years easy!Pair with seafood (any seafood), Mum's Chicken Pie or a creamy pasta dish. Vineyard:This Chardonnay is from the High Eden sub-region in the Barossa and is lean and delicate.100% Eden Valley vineyards.Winemaking :The juice was split to undergo two different fermentations that utilised two different yeast. The main portion was fermented in a brand new 500L puncheon (oak barrel) with a yeast that helps to build texture and delicate stone fruit aromas. The wine also underwent partial malolactic fermentation and battonage (lees stirring) to add complexity and softness. The second fermentation was conducted in stainless steel, fermented cooler with a yeast that promotes citrus and white fruits and underwent battonage (lees stirring) post fermentation for 8 weeks. This wine is lean and fresh with lovely aromatics and crisp acidity.
