The Domaine Billaud-Simon owns almost 3 hectares in the Chablis 1er Cru les Vaillons. Here too, of course, the grapes are picked by hand and then selected again by hand for the quality of the individual berries. The wine ageing takes 14 months and is partially made in used barriques.
