About the wine

Tasting notes

100% savagnin topped up from a single vineyard called Les Molattes on the famous Jurassic Grey Marl. Manual harvest and wild fermentation in stainless then into old demi-muids for six months and bottled with a small amount of sulphur. Rich and generous Savagnin with purity, plenty of salinity and focused acidity to drive it long. Stunning.

The Grape

Savagnin

A white grape variety with a home in the Jura, France, and is responsible for wines of great purity, complexity and uniqueness. When made as a dry white, the wines are floral and aromatic with citrus, apples, chewy stonefruit, salinity with a hint of tropicals, but it can also become wildly complex when made in an oxidative manner and develops delicious nutty, mineral and sherry-like notes unlike anything else in the world. Vin Jaune is a heavily oxidative expression of Savagnin and is becoming a highly sought after and age worthy style for collectors. It might be illegal to have this wine without a generous slab of Comté cheese...
