90% Cabernet Franc (elegance) and 10% Petit Verdot (spices), carefully grown on the Misawa Vineyard, are each vinified in small batches, separated by lot and variety until just before bottling, and matured in French oak barrels for 15 months. The grapes are brought to the winery immediately after harvest, where they will undergo a two-stage sort process and spontaneous fermentation. After maturation, the wine is bottled without fining or filtration. The grape variety composition depends on the year's performance, with no wines produced in years when the weather was not favourable.

Cabernet Franc is a red grape variety used as an important blending component for Bordeaux Blends, but also as an exceptional stand alone expression in the Loire Valley. Cabernet Franc is the father grape to Cabernet Sauvignon and Merlot and with a uniquely savoury dried cayenne/paprika note that distinguishes it from its child grapes. Medium bodied, graced with good levels of acidity and a slightly savoury bias, Cab Franc is a great choice for those who enjoy elegant reds with complexity and pairs perfectly with tomato based dishes and smoked meats.
