Old vines planted in the typical white albariza soils (calcareous rock) and cultivated organically to maintain utmost respect for nature. Fermented with indigenous yeasts in casks and sherry butts and subtly aged under the naturally forming flor veil in used barrels and manzanilla butts.

Complex and utterly captivating! This smells of sweet garden herbals, pear, feijoa, white chocolate, candied citrus and almond paste. In the mouth it's rich, creamy and viscous but somehow manages to feel dry, chalky and tense with flavours that nod to tomatillo, cape gooseberry, sherry and salty brine.
