Drink now to 10 years Pair with lamb roast, grilled Portobello mushroom or a beef ragu pasta.Vineyard:This wine was made 100% from grapes from our family's vineyard in Bethany, Barossa Valley. Our family's Cabernet Sauvignon block is planted on a small patch of cracking clay. The small fissures in the soil created as the weather warms and the soil dries out creates a unique block that is very low yielding and highly aromatic.100% Barossa Valley vineyards.Winemaking :Machine picked in the cool of the early morning, the grapes were crushed into 4 vessels for fermentation; one brand new puncheon and three old oak barriques. Three different yeasts were used to enhance varietal aroma and build complexity. After pressing, the wine was transferred to a brand-new puncheon with a blend of Troncais and Jupilles forests and a 'house' dual toast to build complexity and add richness to the wine. A small amount was also kept in stainless steel to blend in later for freshness. Creating a well rounded complete wine.
