Nutty and saline, pink grapefruit and green pear, some citrus zest and cinnamon quill, with just a little struck match. It’s savoury and hazelnutty, something of a sake-like umami flavour, flinty too, with a subtle buttery gloss, and again that brine-laced flavour on a finish of fine grip and length.
