A Blanc de Blancs produced entirely from Cuchery. The fruit is sourced from two parcels, ‘L’Olivière,’ planted in 2003 and ‘Les Chemins de Champlat,' planted in 2007. Placement of these vines was strategic, mid slope to aid in bud burst given the area's proclivity to frost, largely why the Vallée de la Marne has favoured the later budding meunier. But times are changing, and the Marne, like other regions, is seeing warmer and warmer vintages. Both sites are pruned Taille Chablis. Vinified in stainless, undergoing full malolactic conversion and bottled with 4gm dosage. 1500 bottles produced each year.

Tasting notes

Fine, racy, bright and saline. Showing a little of that 2014 richness, pushing it up close to a full bodied wine with lots of white peach, pear, almond, honeysuckle and sea spray. Undertones of shiitake draw you in deep! Magic.

Creamy gold in the glass with a beautifully savoury nose of gentle honey, shiitake, dashi, caramelised white chocolate, toasted sourdough, cultured butter and vegemite! In the mouth it’s dry and quite concentrated in flavour, with a very fine bead and a tug of tannin. Tart apple, apricot, nectarine and sugarmelon are coloured with fresh cashew and almond, shiitake, hints of chervil and a sprinkle of pink sea salt that stretch long into a tail that ends with an iodine mineral finish.

French for “white of whites”, Blanc de Blancs is a sparkling wine made entirely from Chardonnay grapes. Made famous in Champagne, these wines have an incredible purity and linearity about them and express with intense lemon and apple-like fruit flavours, usually with an underlying seam of minerality and precise acidity.
